Eggless Cake

Ingredients


3 cups Maida
1 cup milk
1 cup cream
1/2 cup refined oil  (heat thoroughly and then cool)
2 cups sugar
3 tsp baking powder
4 tbsp butter or ghee
1 tsp vanilla essence
1 tsp green mango or pineapple essence (optional)
kaju, kismis - for decoration

Directions

Sieve the maida along with the baking powder so that they mix up well, and keep aside.
Grind the sugar in the mixer, add refined oil and butter (or ghee) to it and blend it.
Add the milk and cream along with the essences and blend again thoroughly.
Then pour the mixture in a container. Now add the maida (which was kept aside) to it little by little, all the while stirring with a spatula.
when ready, take the baking dish, and rub ghee on its inside. take few pieces of white paper where ghee has been rubbed too, and place them along the inner wall of the baking dish.
Now slowly pour the batter in the baking dish, taking care that it is poured evenly throughout.
Now decorate this by sprinkling kaju and kismis on it.
place the baking dish in a pre-heated oven and remove after 1 hr 15 mins. serve it hot or cold. it can be stored in a dry place for about a week.
