Ingredients
1 ltr chicken Soup or stock
1 cup done noodles(broken well before cooking)
1 stick Lemon grass-tender inner parts only-finely chopped
1 tsp garlic-finely chopped
2 tsp lemon juice
4 tbsp fish Sauce
2 tsp soy sauce
2 tsp chili sauce
2 tsp corn flour mixed with 1 tbsp water
15 black peppercorns-groun finely
50 gm boiled Chicken pieces-shredded
2 tsp Olive oil
1 Onion-finely chopped
1/2 tsp finely diced Ginger
5 small Spring onions- cut finely
2 tsp grated carrots
2 tsp grated cabbage
2 tsp Coriander leaves-finely chopped
2 tsp finely chopped Capsicum
2 sticks of Celery-thinly chopped
1 or 1/2 tsp salt
1 tsp sugar
1 tsp butter
Directions
Heat olive oil and butter in a saucepan,add the chopped garlic,chopped ginger and onion pieces.Saute this till onion becomes tender.Add the grated carrot,grated cabbage,boiled and shredded chicken strips.Add Soy sauce and chilli sauce and stir-fry until it changes color.
Add the powdered pepper corns,half spring onions,chopped celery,chopped lemon grass,chopped capsicum and saute for 2-3 mins.
Add the done noodles,half coriander leaves,
Add the chicken stock(or soup) and bring to the boil and simmer for 10 mins.
Add the fish sauce,salt and sugar.Mix well for 1 min.
Add corn flour mixture and stir until it turns thick.
Add the chopped spring onion and the remaining chopped coriander leaves.
Add the lemon juice,mix well and turn off the flame.
Serve this Hot and Sour Chicken Noodles Soup with Herbed Crouton
